Hello FaRmily! Wow, it is so hard to believe that we are at week 10 of summer - Yikes, time absolutely fly's by! I hope you are getting in that last minute summer trip and squeezing in as much Summer as you can!

Well, we sure are trying to squeeze in every last bit of summer as the "peak" is now behind us and it seems that these cooler temperatures are telling us that the fall season is right around the corner and we have a lot to do!

As it is, it continues to be a great summer of veggies, classes, events and markets. A ton continues to happen on the farm as we just finished a new greenhouse and our new cold room this week! We are also in the process of opening up new locations (Elizabeth, Hugo, Woodland Park and Fountain), we are planning for our Fall and Winter markets, the nursery is closing soon and our Fall and Winter activities are picking up quickly!

This week the onions were harvested and they will need to be dried and cured. Next comes the potatoes, the pumpkins and the winter squash! Oh boy! Things never slow down around here and that's how we love it! There's a lot to talk about down below, so don't miss a thing and enjoy the newsletter!

The nursery is getting close to the end of the season. We will be continuing to offer Fall plants like lettuces, broccoli, cauliflower and others, as well as lots of herbs, garden boxes and accessories, soil, medicinal plants and house-plants. Soil - The Building Block of Life - Part 4

Organic Matter

Last week we talked about the important issue of tilling - whether to till or not to till. Our take? Don't do it! Go back to our last newsletter to read all about it HERE. This week we continue our series on soil-health by talking about the importance of organic matter. Before we get into the definition of what makes up this amazing substance, let me first say that organic matter in soil is more important than the make-up of your soil, the nutrient density in the soil or even the PH of the soil! To put it plainly, organic matter is critical to your soil and one of the most important things you can measure on a regular basis. Organic matter is important in the soil because it is what builds the soil, feeds the microbes and releases nutrients to your plants.

  • Each percentage of organic material in your soil releases 20-30 pounds of nitrogen to the soil, 4.5-6.6 pounds of phosphorous and 2-3 pounds of sulfur per year!

  • Organic material in the soil holds up to 90% of it’s weight in water.

  • Organic material improves soil structure.

  • Organic material will help regulate PH levels.

  • Organic material reduces erosion loss (1-3 % organic matter reduces soil erosion by 20-30% due to increased aggregate formation and water infiltration).

So, what is "Organic Matter?" I'm glad you asked!

Organic matter, or "OM" for short, is everything that was once living and will now break down to provide nutrients to your soil and the soil-food-web (ie. bacteria, animals and insects). Some examples of good organic matter would be manures, mulches, compost and even plant material like the roots of harvested plants etc. This is essentially the definition of what being "organic" truly is (the actual definition is more to do with carbon, but I digress) - it's using natural, non-synthetic sources of inputs ( chemicals, fertilizers, herbicides etc). "Certified Organic" fertilizers are ones that are made up of organic materials, and those that aren't are what you would call "synthetic."

OM has all the nutrients necessary for plant growth and for the microbial activity taking place. The key is how and when to apply the organic matter, what kind of organic matter to add for what process and how to maximize the use of the organic matter you have access to. Yes, you heard that right, you can literally farm (AS WE DO!) with recycled plant and animal matter - it's called compost, and it, along with a few other simple and natural inputs are all we use on our farm to grow the most beautiful produce this region has ever seen! How we do that and week!

We are continuing to have successful Farmer's Market's every week, here at the farm. We keep scratching our heads and wondering why we have been so blessed to have so many amazing vendors! From pastured chicken and grass-fed beef to beyond-organic vegetables, local baked goods, crafts, cosmetics, cleaning products, coffee roasters and even a Palisade peach vendor - we have it all! So many wonderful vendors and so many awesome activities make our market very special and unique! We hope you join us this week as we welcome a new vendor: Sam's fruit! We will also have "Painting with Tess," which is always a good time. As always we will have the bounce-house, the playground, the splashpad and the free coffee!

Our "DID YOU KNOW" this week comes from KRDO News in Colorado Springs. We were featured by them for a cover on water issues (they reached out to us). It's a short clip, an informative clip and one that perhaps left a backstory lurking and wanting to be told. You see, we aren't perfect, and I don't want anything we say to come across as if we are or that we think we are - BECAUSE WE AREN'T - nor as if we judge anyone else for where they are currently at.

To be clear, I do not believe that there is one "perfect" way to farm, nor do I believe it can ever actually be achieved. We just do our absolute best to eliminate any harm to our planet, community or our health that we can while trying our best to constantly refine and improve our practices to be one step closer towards that "perfect" goal, that elusive, potentially impossible goal that we strive for none-the-less, to bring our community the purest food with the least environmental impact possible.

We are all on a journey, and we do not take pride in being "better" than anyone...enjoy the video.

This Week's Harvest

As always, nothing is guaranteed. These are the items that are "in season" and are anticipated to be ready this week (which may or may not be available at the CSA).

  • Small = 4-6 items per week

  • Medium = 7-9 items per week

  • Large = 10-12 items per week

    1. Redbor Kale and Darkibor Kale - Some of the most amazing kale you have ever seen or tasted! Taste is NOTHING like in the store - those that know, know! Try some this week, massage is real good, follow one of THESE recipes and let your tastebuds have a party!

    2. Carrots - Oh sweet and amazing carrots, you are so beautiful this week!

    3. Radishes - beautiful radishes. Stunning in color, crisp and juicy without too much spice. Harvested young and small in the summer.

    4. Scallions - Who doesn't love scallions!? Did you know that if you leave the roots on and stick it in a glass of water the scallions will re-grow for a second cut!? It's true - try it!

    5. Garlic - An heirloom hardneck variety, from our own stock, it is potent and amazing garlic! Ready to store if you aren't ready to eat it. The bulbs are small, but still delicious! 2 Small bulbs per serving.

    6. Beets - In the words of Dwight Schrute "Beets are best!" yes, we think so! One of our absolute staples in our family are beets. Beets are on nearly every Shabbat table in the form of a beet salad: Roasted beets, de-skinned, lemon juice, parsley and salt - served cold. Yum! Don't like that idea? Try these!

    7. Celeriac Greens - Similar to celery, but more bitter. Celeriac is great in stews and in cooked dishes or other places where you would like to substitute celery.

    8. Fennel - Fennel is one of our favorites! Don't forget to use those fronds - eat them now, or dry them and save them - but don't waste them! :) Here are some ideas.

    9. Parsley - Parsley is one of my (Yosef) favorites! Who doesn't like parsley!? Ready to eat raw or hang and dry to save for later. Need some recipe ideas? GO HERE.

    10. Kohlrabi - Gorgeous bulbs with tasty leaves! We love kohlrabi raw with lemon and salt, but it's fairly versatile. Don't forget to eat those amazing greens and click here for some more ideas.

    11. Hakurei Sweet Turnips - The absolute best turnips on the planet - they are SO sweet and delicious, kids eat them like apples and they are extraordinarily versatile. Definitely a CSA staple and favorite for so many!

    12. Tomatoes - So many tomatoes! We have red ones, yellow ones, green ones, purple ones and orange ones! They are SOOOOOOOOOO good! Expect a lot of these throughout the summer!

    13. Summer Squash - Fully in now, we have scalloped squash, zucchini squash, romanesco squash and so much more. Try them all, they are all unique and are all delicious! Our favorite and easiest way to eat it all summer long is by grilling it!

    14. Swiss Chard - One of my absolute favorite greens to saute' and wilt deeply. I love garlic, oil and salt and taking this amazingness and adding it to a bed of rice or quinoa and adding in different vegetables, some tofu (or meat) and then we love an asian peanut-based dressing and it's to die for.

    15. Salad Mix lettuce- A beautiful and soft/fluffy salad mix (with some arugula and flowers mixed in - YUM!). perfect for a salad base or even a bed of rice etc.

    16. Cucumbers - Two kinds of cucumbers: Pickling and tendergreen. Our favorite? The tendergreen, but they are all delicious!

    17. Plants - There will be plenty of plants to choose as an item this week, even some garden varieties. Enjoy!

    18. Living Herbs - We have basil, chamomile, mint and a lot more!

    19. Red Russian Kale - Baby kale is always so tender! Sauté' it, eat it raw, add it to stews...there so much to do. Here are some ideas.

    20. Garlic - Our garlic is harvested and ready! We are so excited for garlic season, but unfortunately, much of our garlic turned out smaller than we had hoped due to an "oopsie" while growing. BUT, it's still absolutely delicious garlic (the largest ones we will keep for seed come Fall)!

    21. Dried Herbs - Basil, dill, mint and fennel (our herb room smells like heaven!😇).

    22. Radish Microgreens - Next to the barley grass and the sunshoots, radish microgreens are some of the most nutritiously-dense items we grow on the farm and not only that, but during our annual survey last year, they ranked as the #1 most requested and love item we grow! They have a fantastic bite to them, last considerably long in the refrigerator and are beautiful in appearance.

    23. Kohlrabi Greens - Stalk and all, these amazing greens are delicious! I love to eat them similar to collards, or broccoli greens, sautéed in butter with some garlic and salt, but they have a unique flavor that is very nice! Absolutely delicious greens!

    24. Pea Shoots - One of the most desired and sought after items we provide are these pea shoots! Quite literally the best you added to any dish or salad. Our favorite way is to add them to stews and soups. A perfect topper too! Here are four fun ways to use Pea Shoots:

    25. Broccoli Microgreens - Last week we told you that Radish Microgreens were the #1 most loved item we grow, well, these microgreens weren't on the list then! I have a sneaking suspicion that these microgreens are the real winners!

    26. Sunshoots - Our sunshoots are certainly some of the nicest, most high-quality sunshoots you will ever find (that actually goes for all our microgreens). They are one of the most beloved items we grow as well and a regular staple to our CSA. Here are some ideas to use your sunnies this week:
